Wilderness Chef: The Ultimate Guide to Cooking Outdoors is a gorgeous and inspiring wild cookery book, from the master of bushcraft.
From an egg on a stick to baking bread and conjuring up a delicious roast, Ray Mears takes us from the basics of outdoor cookery all the way through to opulent feasts.
Gather round an open fire. Share delicious food inspired by the outdoors and infused with age-old wisdom. This is living. This is the way of the wilderness chef.
Ray Mears has spent his life travelling the world, living with and learning from native peoples in the desert, the rainforests and the Arctic north. Cooking food in the wilderness has been central to his journey, and in this book he presents us with a delicious array of his most popular and enduring recipes, tried-and-tested for all levels of skill and in all conditions, from quick and tasty meals to opulent gourmet feasts.
Opening with advice on setting up your outdoor kitchen, and cooking techniques time honoured by first nations, hunters, trackers and adventurers, Ray shows how to assess your ingredients, light a fire, cook in ashes and leaves, steam, smoke, and build a ground oven.
He then shares with us his fabulous and enjoyable recipes, including: - easy ideas that children and grown-ups can try out including campfire s'mores, wilderness hot dog, egg on a stick, lemon chicken wrapped in dock leaves - gourmet meals of Italian hunter's rabbit, and succulent split-stick roasted salmon - recipes learned from bushmen and native peoples around the world which include potjiekos, canoe country pancakes, fragrant and intense Gurkha curry.
Woven throughout are colourful stories of Ray’s cooking around the world, from baking a birthday cake using ingredients sourced in the rainforest, to steaming fish Maori-style using bags crafted from Bull Kelp, and pulling a giant Emu leg drumstick out of a ground oven built by a Pitjantjatjara elder in the Central Australian desert.
This is a practical and inspiring book drawing on the love of the outdoors, cooking in the open air and creating delicious food from scratch.

Felt I must include my review of Wild Food with this one - 'bought this beautiful book for my son-in-law as a birthday gift. He is a chef by profession and is quite used to dressing his own game in the field. He is broadening his repertoire and loves foraging and inventing new dishes from his finds. This was a perfect gift. Thank you Ray, I will definitely be purchasing more lovely books from your range.' These reviews stand side by side, we bought them as a companion set. They are perfect as practical reliable books to use in the field. We call it 'Wilderness Fine Dining.' Thank you Ray for sharing your experiences, knowledge and love of all our beautiful Earth provides for us - and we take it so much for granted. Bless you.
Great book. Hoped to get some tips to improve my meals on my canoe camping trips, however this book has inspired me to do more in the kitchen (e.g. made bread for the first time) on the basis of 'if Ray can do great meals in the wilderness, surely it might just be possible for me to up my own game in the kitchen'. If nothing else, this book has given me confidence to try to do more than just take the usual dehydrated meals with me. Last trip breakfasted on pancakes and syrup which significantly added to the overall enjoyment of that outing. Really pleased to have this book.
An absolutely wonderful gift for my Husband. Not only is it full of useful information, it is signed also, making it even more special. The delivery was incredibly quick from order placement, and packaged incredibly well. Highly recommended book for all the wannabe 'Wilderness Chefs' out there.
I received this book as a birthday present and was delighted to find it is a signed copy. An excellent guide on outdoor cooking highlighting techniques, equipment and ingredients. Packed with tasty and inspiring recipes.
A must if you like cooking and nature. I've made several dishes from it including the yakitori chicken, stick bread, bannock, some of the soups and fish dishes and particularly enjoyed the scout cooking section. Not just a recipe book but a guide full of wisdom and useful tips and techniques helpful for planning your trips and understanding the process and products for cooking and dining outdoors. For me I enjoy heading out for trips just to cook and this book has been an inspiration.
Some handy tips and tricks in here plus some excellent guidance on various levels of camp kitchens - I've only tried a few of the recipes so far with edible results! Some of the recipes are worth a bit of prior preparation but a lot of applications for the methods described.
I took part in the Tracking course with Ray in 2018 which turned my life around in terms of finding and spotting wildlife, whilst on the course a few of us were chatting to Ray when he mentioned he was writing a new book. Ears pricked up and we were all intrigued, where has he been now? what has he seen and learned?, well apparently it was a cookbook! I did notice a few people visibly recoil including me, what RM writing a cookbook?
I bought it anyway, and I'm really glad I did, yet another bushcraft cathartic moment, the first recipe I tried (Sami Soup) was absolutely delicious and completely changed my view on tasteless freeze dried foods for one or two nighters or longer in the forest, how have I never tried this before. I have now cooked several meals and will rarely eat ready foods ever again whilst in the outdoors, brilliant book, super recipes and even a clutz like me can prepare and cook them and the ingredients are healthy, filing and unlikely to languish in the back of the cupboard for long. Thanks for opening a culinary world that had laid dormant for many years.
This was bought as a Christmas present for my son.
Communication was very good, shipping was quick and the book was delivered ahead of schedule.
I had a sneaky peek before wrapping it and look forward to having some of the recipes cooked for me!
My son has been delighted with the book and is enjoying reading it as well as looking forward to cooking up a storm. Great choice!
Great service as usual from Woodlore. The book is amazing and is a must have for novices as well as seasoned outdoorsman
Once again an exceptional book by Ray Mears. Very good pictures, descriptions and recipes, all accompanied by excellent explanations!
A comprehensive and fascinating summary of Ray's most important skills. Great advice for all budding wilderness cooks and plenty of cracking recipes.
Another excellent addition to the Ray Mears section of the library. Informative, motivating and well presented.
Very happy with book and contents information. Arrived in good condition and promptly.
Book arrived well packaged and in good time. I have read and greatly enjoyed this book. I would definitely recommend the book to any outdoors cooking enthusiasts
A great read, I could not put it down. I cannot wait to see Mr Mears in Bury St Edmunds for his show as I went there last time Mr Mears came here. I have all of his books and DVD's and I hope he keeps coming. I hope you are all well and keeping safe.
Fantastic read, have read it cover to cover several times since it has arrived. As usual Ray has put together a well thought out and well presented book and I would recommend this for the outdoors lover and a great idea for those Autumn and Winter afternoon/evenings in front of the fire with a winter warmer.
As an ex British Army chef with a number of years of experience cooking in various conditions, and a scout leader who ended up undertaking a lot of the cooking on the annual scout camps and at scouting events I was interested to read this book.
I must admit I like the way the subject of what items of equipment are needed and why is covered at the beginning of the book. A great reference tool for someone who is planning to undertake cooking for themselves or a group of people in the outdoors or even for an outside event.
An easy to read book. Maybe a copy in hardback instead of soft cover. Make sure to get it covered as I can see this book being taken on camping trips and other outdoor events.
The issues of health, safety and hygiene are covered. Good to see.
The recipes are worth a go. Although venison on a scout troop budget maybe a little out of reach, (recipe for venison stroganoff is excellent).
I will be recommending to all my friends who are in the scouting movement and friends who enjoy the outdoor life.
Great book to get the grandchildren cooking
A mouthwatering book!
Beautifully laid out and full of enticing recipes which will challenge and delight.
Leave the noodles at home!
This book provides a wealth of information to enliven your outdoor experience further with moral boosting meals that will surely make for more memorable camps.
Great book - bought as a present but kept it and ordered another. Have tried some of the recipes while camping and also at home (with reasonable success). Will try some of the camp oven recipes to see if they work in my Cobb BBQ next.
I bought three of these books (two were gifts) for our upcoming Bush Chef course this September. This book has exceeded my expectations. There's so many simple recipes to follow. There are lots of beautifully taken photos of food to inspire you. Two of my many passions in life are cooking for myself and others and spending time outdoors. This book just encourages me to do both more. Thank you Woodlore for your prompt service as always.
This book is fantastic, a well-rounded guide that will inspire those both new and old in the world of cooking outdoors. Very clearly and well written, there is not an ounce of confusion in the recipes and even the more complex are achievable by anyone. A real delight and one I will enjoy sharing with others.
Wilderness Chef' by Ray Mears,
Where do I begin? WOW!
This useful volume covers just about everything one needs to know to cook healthy and enjoyable meals in the outdoors, from the day hiker looking for some lunch ideas to the multi-day trekker tired of the same old dehydrated or freeze dried rations, its primary focus though is on fresh cooked meals in the bundu, showing that with a few simple ingredients taken along and a few locally sourced supplementary items foraged along the way, that you can eat well and enjoy the experience too.
Highly recommend this one for anyone who spends time out in the bush..
I was so looking forward to receiving a copy of Ray Mears new book.
Such a gorgeous book, filled with great recipes and super ideas.
Thankyou Ray, it was as I expected - another wonderful book from you.
I look forward to doing some of the recipes and sharing them with others
Got this for my daughter who is a scout, to enhance her skills in backwoods cooking. Got a lot more than we expected. Very informative and creative. This book really covers all areas of cooking outdoors. Some great tips on seasoning that would make any meal tasty. It shows how to utilise what's around you to cook and also gives information on camp ovens. Baking is covered too with simple bread recipes to apple pie. You could honestly bring your family outdoors for the Sunday roast!! Really looking forward to trying these recipes out. Would highly recommend this book for those who love dining outdoors and getting back to nature!
What a great inspirational book. Well presented by the author with lots of lovely photos and easy recipes. Something I will definitely be trying out over the campfire. A book for those who don't want to just cook beans, sausages and bacon.
Absolutely fabulous book, very well structured and perfect for both newer and us more experienced outdoor folks, I've already made a full roast dinner cooked in a Dutch oven, and the Beer bread is fabulous and so simple on the camp fire. This book is going to be very well used, it's becoming a family favourite already!
Another fantastic book! Bushcraft is about learning new things every time and this book will help you upgrade the way you cook in the wilderness, setting camp, what ustensils to use and how to improve the flavor of what you eat, plus a lot of recipes to try. As Ray says on his cuisine related shows, while enjoying the food he processed: fantastic!
I have been camp cooking for years and am enjoying the book tremendously. The approach on some of the cooking and recipes are very similar of what I have done over the years. But there are greater amounts that I have not tried and looking forward to experiencing them with the next generation of family members. Excellent book and fun read!!!
